Kimchi may have anti-obesity properties, helping to significantly reduce body fat, according to new studies

Obesity, one of the major global health challenges, affects approximately 16% of the world’s population, or around 890 million people. The World Health Organization (WHO) has highlighted the detrimental effects of obesity on individuals’ quality of life and overall health.
In this context, the World Institute of Kimchi in South Korea has conducted numerous studies to investigate the potential anti-obesity properties of kimchi, a traditional Korean fermented food made from vegetables mixed with spices (such as chili powder, scallions, garlic, and ginger) and Jeotgal. Research has shown that regular consumption of kimchi can significantly reduce body fat levels.
Preclinical findings
Preclinical experiments have revealed a 31.8% reduction in body fat among subjects fed a kimchi-based diet. This finding is supported by a 13-year longitudinal study conducted as part of the Korea Genome and Epidemiology Study (KoGES). The study demonstrated a 15% reduction in BMI and a 12% decrease in obesity incidence among middle-aged men who regularly consumed kimchi.
Results of the second study
Another clinical study, led by Dr. Sung-Wook Hong, examined the impact of kimchi on 55 overweight adults with BMIs ranging from approximately 23 to 30 kg/m² (BMI is a universal measure). Participants consumed capsules containing about 2.1 ounces of freeze-dried kimchi daily for three months.
The results revealed a 2.6% reduction in body fat in the kimchi group, while the control group experienced a 4.7% increase in body fat. This statistically significant difference underscores the effectiveness of kimchi in promoting body fat loss.
Additionally, an analysis of the participants’ gut microbiomes showed an increase in the beneficial bacterium Akkermansia muciniphila and a reduction in Proteobacteria, which are often associated with obesity. These changes suggest that kimchi positively influences gut microbiome composition, contributing to weight management and overall health.
Dr. Hae-Choon Chang, director of the World Institute of Kimchi, emphasized the significance of these findings, highlighting kimchi’s potential as a functional food for global health. Beyond its anti-obesity properties, kimchi has demonstrated benefits for gastrointestinal health, the immune system, and even potential anti-cancer effects.
